cOCONUT mILK fRUIT sMOOTHIE rECIPES

A coconut milk smoothie has lots of really good-for-you properties. Not to mention, the milk makes smoothies taste tropical and creamy- and who doesn’t love that?
You don’t need a lot of coconut milk to make your fruit smoothies creamier and coco-nutty. I generally like to use at least a half cup of coconut milk.
There are different versions available in the supermarket: Low fat and regular. The low fat version of coconut milk is significantly waterier, but also much lower fat. While the regular version is higher in fat, it’s decadent and better tasting. Don’t forget though, the fat in coconut is not the kind that adds cellulite, it’s part of the good fat group of fats.
If you have fresh coconut on hand and would like to make your own for your coconut milk smoothie, blend a few pieces of the meat with the juice, or replace the coconut milk in these recipes with fresh coconut juice.
Note: If you need more water to make the smoothie more liquid for your blender or your taste, feel free to add more milk to the recipe, it won't change the taste.
P.S.- If you're ever in a pinch and can't think of a recipe but want to use coco milk, no problem, just use bananas. If you make a banana smoothie with coco milk it's always a favorite!
Kiwi + Banana
1 cup of coconut milk
2 kiwis
1 banana (frozen)
Put all of the ingredients in the blender and process until smooth.
Vanilla Coconut
1 cup of coconut milk
2 frozen bananas
1 tablespoon of vanilla
Put all of the ingredients in the blender and process until smooth.
Strawberry Coconut
½ cup of lowfat coconut milk
1 cup of strawberries
1/2 cup of frozen pineapple chunks
Put all of the ingredients in the blender and process until smooth.
Strawberry Melon
1 cup of strawberries
¼ to ½ melon
½ cup of coconut milk
1 tablespoon of honey or agave nectar
Put all of the ingredients in the blender and process until smooth.
Blueberry Coconut
1 cup of blueberries
1 cup of whole coconut milk
2 tablespoons of honey
Put all of the ingredients in the blender and process on high for at least a minute until smooth.
Pineapple Coconut
2 - 1 inch rounds of pineapple (cored and cut into chunks)
½ cup of coconut milk
½ cup of milk
2 tablespoons of honey
Put all of the ingredients in the blender and process until smooth.
BONUS RECIPE
Chocolate Milk Coconut Oil Smoothie
2 tablespoons honey
1/8 cup pecans
2 tablespoons cocoa powder
1 ½ cups milk – almond milk, coconut milk or whatever works best for you
2 tablespoons coconut oil
Directions
Blend in your blender until smooth and enjoy! Sprinkle cinnamon on the top to garnish!
