Nut Butter Tutorial
To make your own nut butter, you're going to need either a food processor or a high-powered blender.
Roasted nuts are easier to blend into a butter because their oils release quicker when grinding/blending them.
It can take anywhere from 5 – 20 minutes to blend up a batch of nut butter. As you're blending the nuts, you'll be tempted to add oil to help them get smooth more quickly, but I don't recommend doing that unless you have to. The nuts will release their own oils eventually, just sometimes it takes a fair amount of time and you do not want it to be too runny when finished.
You can really have fun with homemade nut butters and add any sort flavorings you'd like. I love turning to spices, natural sugars like coconut and maple, liquid sweeteners like honey and maple syrup, and even extracts like vanilla.
Most add-ins won't affect the texture of your nut butter, except for liquid sweeteners. Honey and maple syrup will make the nut butter a bit thicker. If you want your butter smooth then I would recommend either adding a touch more oil to thin it out or use a granulated sugar or you can roast the nuts with sweetener (Honey or Maple Syrup)

Melted Chocolate
Honey Roasted Peanut Butter
A delicious nut butter recipe
Ingredients
3 cups organic peanuts
3 tablespoons raw honey melted
Pinch of sea salt
1 tablespoon coconut oil optional
Instructions
Place peanuts on a baking sheet (I used the sheet that comes with my toaster oven). Drizzle honey on top of nuts and sprinkle with sea salt. Stir until the peanuts are coated.
Toast the nuts for 5 minutes, then transfer them to a food processor and process on high until smooth and creamy. You might have to scrape the sides down as you go to help the nuts continue to blend.
If the nuts don't get smooth, add 1 tablespoon of coconut oil and blend again.
Transfer to a glass container and store in a cool dark place.
Pumpkin Spice Almond Butter
A delicious nut butter variation
Ingredients
4 cups almonds
2 - 3 teaspoons pumpkin pie spice
Instructions
Place almonds on a baking sheet (I used the sheet that comes with my toaster oven) and toast the nuts for 5 minutes.
Transfer them to a food processor and process on high until smooth and creamy. Again, you might have to scrape the sides down as you go to help the nuts continue to blend. Once smooth, add the pumpkin pie spice and process again to incorporate. Taste and adjust spices as necessary.
Transfer to a glass container and store in a cool dark place.
A chocolatey Nut Butter (Nutella)
Ingredients
4 cups hazelnuts
1/3 - 1/2 cup dark chocolate chips depending on taste (I use Milk Chocolate)
Instructions
Place almonds on a baking sheet (I used the sheet that comes with my toaster oven) and toast the nuts for 5 minutes.
While the nuts are toasting, melt the chocolate in the microwave or over a double boiler.
Transfer them to a food processor and process on high until smooth and creamy. Again, you might have to scrape the sides down as you go to help the nuts continue to blend. Once smooth, add the melted chocolate and process again to incorporate.
Transfer to a glass container and store in a cool dark place.
A slightly sweet, completely smooth and absolutely delicious on everything Nut Butter
Ingredients
1 cup raw pecans
1 cup raw almonds (I used pecans)
1 cup raw cashews
1 1/2 tablespoons pure maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon ground vanilla bean powder
1/2 teaspoon sea salt
Instructions
Add nuts to a parchment lined baking sheet (or toaster oven sheet) and drizzle with maple syrup. Sprinkle on seasonings then stir to combine.
Toast nuts for 5 - 6 minutes until fragrant and starting to brown. Alternatively you toast them in the oven at 350ºF for 15 - 20 minutes.
Allow nuts to cool slightly then transfer to a food processor. Process on high until smooth and creamy, about 10 - 15 minutes depending on your food processor. You might also have to scrape the sides a few times to help keep the nuts blending.
Once smooth, transfer to a glass container and store in the fridge.
You can make a nut butter out of pretty much ALL Nuts and Seeds such as Hempseed and Pumpkinseed! Let me know how you like it!
